Simple Almond Butter Cookies

Shortly after the puppy chow incident, we also decided to whip up a batch of cookies. I have a giant container of almond butter that I’m trying to get through before we have Christmas break, and Emmy has a bunch of oats as well. We quickly decided on almond butter & oat based bookies. We started with this simple recipe, but weren’t really liking the texture. We ended up adding a few ingredients, and here’s what we came up with…

(loosely based off of this recipe)


  •  ½ cup almond butter
  •  ½ cup packed brown sugar
  • 2 eggs
  •  ½ cup whole wheat flour
  • 1¼ cups quick-cook oats
  •  ½ tsp. baking soda
  • ¼ cup coconut oil
  • ¼ tsp. salt
  • 1 tsp. vanilla



  1.  Preheat oven to 350°
  2. Combine all wet ingredients in a bowl. When those are combined, add in the dry ingredients and stir until combined.
  3. Place balls of dough on cookie sheet (ours were a little over 1 inch in diameter, but you can do whatever size you like). Press down lightly. You can even add the traditional cross-hatch that peanut butter cookies have if you’re feelin’ fancy!
  4. Bake for 6-8 minutes.
  5. Enjoy!

They turned out to be very tasty little cookies! This was one of the few recipes that I was doubting slightly as we put it in the oven, but I was happily surprised by our result. They were very easy to throw together, and I can definitely see myself making them again. If you get a chance, try them out! They’re bound to put a smile on someone’s face.
